Maybe I'm just unlucky, but every Mopar I've owned seems to deplete the bottom half of the tank than the top half. I figured it was something to do with the resistance of how the gauge works, and the float sloshing around more in a half tank.

What you want is a 3 row (or 2 row) that's as thick as most 4 rows. You want to dissipate heat fast! That's why aluminum radiators are better than brass radiators, they dissipate heat better. If sticking with an original brass radiator and just added a new core, stick with the 3 row assuming...

It could be something as simple as fine tuning your combination (timing and air/fuel). Start a new post in the Engine Issues section and give more details on your build (which Holley 750, current timing setting, idle speed, vacuum reading from the carb/intake, camshaft, compression ratio, etc.)...

Try softening the rubber boot you have. Use a hairdryer (or oven is you can get away with it). Down here in the desert, I'd just leave it outside for a few hours as we're already triple digits. Another option if the heat doesn't soften the boot is diesel fuel, but that makes it kinda stinky...
