I honestly think this touch screen would work. BOSS Audio

The floating head unit looks like it will stick out far enough to clear the gauges and has quite a bit of up/down movement as well as swivel movement.
It might not be the top of the line stereo but does get pretty decent reviews.

The 7 inch is a perfect fit with standard dash.
